Happy Thanksgiving everyone!
This year I made some new dishes for the holiday. On accident, my mom and I both forgot to pickup a box of stuffing at the store. No worries, I had been wanting to make stuffing from scratch for some time. I found an Apple, Cranberry, Pecan Stuffing recipe over at Real Simple and set to work. The recipe was very simple, however, I made some substitutes. Instead of pecans, I used toasted almonds that I had on hand. I also skipped the celery, since I didn’t have any and going out to the store on Thanksgiving wasn’t realistic. Here’s the stuffing before it was popped in the oven:
And here’s the stuffing after baking. The only thing I’d change would be to add more broth. The stuffing came out as a drier mix, and I prefer mine to be more moist.
To no surprise, the leftovers were awesome after having sat in the fringe overnight.
As another Thanksgiving first, I made homemade macaroni and cheese per M’s request. I had asked him what foods remind him of the holiday and he requested this dish. I used the Pioneer Woman’s recipe from her cookbook. Overall it came out really well.
I used two different cheddars, and I think I need a more gooey cheese next time. I also have to look into whether or not I like a baked macaroni and cheese or a more traditional recipe.
Overall, the Thanksgiving table looked delicious, even for the setting of three that was there. We ate a lot and enjoyed the fixings. Yum!
